Yummy Vegan Spelt Waffles


Okay, so you know how I said that pancakes were my second favorite thing to eat.  Well the absolute first is definitely waffles.  I love waffles with a passion that cannot be rivaled.  I don’t think I will ever tire of eating them and I eat them every single day.

Anyway, I thought I would share my recipe with everyone because it is quite good and I know that you will adore them as well.  How could you not???

They are very easy to make and it goes really fast once you get into the flow with the waffle iron.  So here is the recipe:


Yummy Vegan Spelt Waffles


3 cups spelt flour

1 cup oat flour

4 flax eggs   (4 Tblsp. Flax meal + 12 Tblsp. water)

6 teaspoons of baking powder

1 teaspoon of salt

1 1/2 teaspoon of cinnamon

1 teaspoon vanilla flavoring

3 1/2 cups almond milk

1/4 cups olive oil


1.) Prepare your flax egg by mixing your flax meal and water in a small container and let it set for a few minutes.

2.) Combine all dry ingredients (spelt flour, oat flour,  baking powder, salt, and cinnamon) in a large bowl.

3.) Now add your wet ingredeints to the bowl with the dry ingredients (flax eggs, almond milk, olive oil, and vanilla) mix together until smoothly combined.

4.) Use a hot waffle iron to cook the waffles and enjoy

I hope you enjoy this recipe as much as we do.  My kids really love these and they have them everyday before school.  The recipe makes a good hearty waffle and will fill you up.
