Vegan Oatmeal Banana Pancakes


One of my second favorite things to eat are pancakes.  They have been my best freind throughout the years and now that I am vegan I have to find a good recipe that will satisfy me.  This has not been a happy search.  I find that certain recipes just don’t work when you sub out certain ingredients with the vegan alternative.

The latest pancake recipe that I am going to try is one that I found on pinterest, but I have made alterations to fit my personal pallet.  I will keep you posted as to how it turns out.  (Well I guess you will see for yourself when I display the pictures, let’s keep our fingers crossed…)

Without further ado, here is the recipe.



Vegan Oatmeal Banana Pancakes


 2 cups  oats

2 tablespoons of spelt flour

2 teaspoons  baking powder

1/2 teaspoon sea salt

1 teaspoon of cinnamon

1 cups vanilla almond milk ( add more to get the proper consistancy )

1 ripe banana


1.) Add the Oats, Flour, Baking Powder, Sea Salt, Cinnamon, and Almond Milk to a blender and blend until nice and smooth.

2.) Add the Banana and then blend again until smooth

3.) Use a lightly oiled skillet or griddle to cook

4.) Top with your favorite fruit or syrup.  I like to use agave

So after doing this recipe I found that mixture turned out to be very wet and so it wasn’t the best batter for a waffle iron so I switched to pancakes to finish the batter.  They turned out much nicer then the waffles even though the taste was the same.  I must say they are quite good, just a little more moist then I am used to.

The banana flavor is very pronounced, it is almost like a french toast banana bread.  I also discovered that not much agave was necessary because the sweetness of the banana was very effecient at providing an adequate amount of sweetness.
