I made cookies today and they turned out so beautifully I just had to share what I did. The recipe is one that I have been tweeking for some time and fianlly today it all clicked.
They turned out with the perfect amount of sweetness and they were also moist, you are sure to love this recipe and also it will be a major crowd pleaser.
Vegan Chocolate Chip Cookies
1 stick of earth balance buttery spread – softened
1/3 cup brown sugar
1/3 cup cane sugar
2 flax eggs ( 2 Tblsp. flax meal + 6 Tblsp. water )
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup oat flour
1 cup spelt flour
splash of almond milk
1/2 cup chocolate chips – vegan
1.) Prepare your flax egg by combining your flax and water in a small container or cup and set aside to set.
2.) Add your softened butter to a bowl and cream it with the brown sugar and the cane sugar.
3.) Add your flax egg when set (slightly thickened) to the egg mixture along with the vanilla and mix.
4.) Now add your baking soda, baking powder, salt, oat flour, and spelt flour and mix thoroughly.
5.) If your mixture is too firm you can soften it with a splash of almond milk, next add your chocolate chips.
6.) Cook these in a 375 degree oven for 11-13 minutes or until the bottom is lightly browned.
