Ever wonder what to do with those left over beautifully delicious bananas that have gone a bit too far to eat. You could freeze them for a smoothie later, or you could make a delicious banana bread. Well, that is what I did today and I love how it turned out. I found this recipe online and made a few moderations to make it my own; this is what I came up with. I really like how it turned out. It is moist and the walnuts make it the perfect treat with a cup of tea or coffee.
Without further ado here is the recipe, give it a try for yourself. I know you will love it.
Healthy Vegan Spelt Banana Bread
3 ripe bananas
1/2 cup of organic cane sugar
2 tablespoon of ground flax or flax meal
3 tablespoons of olive oil
1 splash of almond milk
1 1/2 cups spelt flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
2 dashes of cinnamon
1/2 teaspoon of vanilla
1/2 teaspoon of sea salt
1-2 handfuls of walnuts or any nut of your choice
1.) Preheat your oven to 350 degrees.
2.) Place the three bananas in a large bowl and mash them with a fork making sure they are all nice and mushy.
3.) Add your sugar, vanilla, ground flax, and olive oil to the banana mixture and stir until incorporated.
4.) Add your spelt flour, baking powder, baking soda, and sea salt to the wet mixture and stir until incorporated. This is where you would add your splash of almond milk if need be. You are looking for a nice smooth moist consistancy.
5.) Add the walnuts or whatever extras you like and fold them into the mixture.
6.) Lightly oil a bread pan and add the batter.
7.) Cook for 42 minutes or until a knife inserted in the middle comes out clean.
